Pumpkin Chip Muffins

Pumpkin Muffins with Chocolate Chips

2 cups GF all-purpose flour
2 ½ teaspoons baking powder
1 ½ teaspoons xanthan gum
1 teaspoon ground ginger
1 teaspoon ground cinnamon
¾ teaspoon salt
¼ teaspoon baking soda
Dash ground allspice

1 egg
¾ cup packed brown sugar
¾ cup canned pumpkin
2/3 cup milk*
3 tablespoons butter, melted
1 teaspoon vanilla extract
½ cup semisweet chocolate chips 

Preheat oven to 375°. Grease or paper-line 12-cup muffin pan.
In a large bowl, whisk together the first eight ingredients.
In a separate bowl combine the egg, brown sugar, pumpkin, milk, butter and vanilla; stir into dry ingredients just until moistened. Stir in chocolate chips. Fill muffin cups three-fourths full. 

Bake for 18-22 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from the pan to a wire rack.

Yield: 1 dozen
*Recipe was tested using fat free milk

Yesterday (Friday) I spent 12 hours at the bakery with a couple team members, learning, teaching, and baking. Then came home and labled and wrapped baked items to sell at an event I am at today. My head and very tired feet were finally able to lay down around 11:00 last night.

After we baked our first two batches of muffins and tested them to see if they tasted ok – we went around to our neighbors in the plaza with samples. They all said they are very excited about us opening up and one girl said she planned to be our best customer! One of the owners has two little girls and every day they have been checking to see if we are opened yet – too cute!

I also placed my first Homeland Creamery Ice Cream order! That will arrive Tuesday.

We won’t have a full compliment of product ready on Monday, but I’m going to do my best to have a decent array.

Today’s event is a the Cultural Arts Center – downtown Greensboro. It is open to the public, so come by and see me! This is a Women in Business Expo.

Monday evening I will be giving a short presentation at the Curves near Guilford College – the event is called “Girls Night In”.

I’ve got a lot to do before today’s event – so I’m off to help anyone who wants - to have a TASTY day!

Moving in the couch

Well, needless to say – things are really hopping now.

Two more inspections have passed – Fire and Mechanical – one more to go – Building, which is supposed happen today – then we can start ‘playing’ with the ‘new’ equipment and moving the rest of the stuff into the kitchen.

My couch came yesterday, the window UV film was installed on the door and windows yesterday, and we interviewed another team member.

There is a lot on my plate for today, so I need to keep this short and get moving!

Started off with waking up before the crack of dawn – hungry – (hate it when that happens!) – and got book work done, 3 loads of laundry, breakfast, shower and out the door at 9:50 a.m.

Once I got to the bakery, we had several meetings  – up until about 1:30 – then we started to work on putting together the modular office that Don picked up yesterday. We got a great deal on this unit and it looks like it is going to work out well for our needs.

Two cool things worth mentioning here happened today: 1 – the electrical inspection passed!!!!! (YAY!) and 2 – our commercial landlord must really like us – he has invited us to his home for dinner! How often does that happen? Having never had a storefront and leased commercial property before, not sure how many landlords have a personal relationship with their tenants – but I think it is cool!

Well friends, I was at the bakery for 11 hours today, and as I type this, Don is still there – 14 hours and counting – there is just so much more to do before we can open…..I’m tired – good night and dream tasty dreams.

WOW! A lot sure did happen yesterday! We had a glitch with our wifi/phone service, so our dear friend, Julius Koonce from PC Plus Solutions was out in a jiffy to see what the problem was. Then Don found a company that can correctly put the vent system in for the oven hood and they will be out on Monday to check it out. The plumbing inspector came by – IT PASSED!!!! And, he was very surprised that the city made us put in a 100 gallon grease trap! He said we shouldn’t have to have ANY grease trap! UGH! Oh well, it is what it is! While the plumbing inspector is here, a couple reps for a security company come by. While all this is going on, our sign people are installing the signage for the door and the marquis. (Looks great too!)

I’m beginning to think we are going to have to work the midnight shift to get ourselves organized in here! Poor Don was trying to get the bakery display case cleaned up and didn’t get anywhere with it. I did manage to get some more unpacking done.

While all this is going on, I am trying to set up an appointment with the mayor’s daughter and family to meet me and see the bakery AND our newest team member has an English paper to do for one of her college courses and is doing it on me and the bakery – so we are trying to coordinate her being at this meeting as well. OK, that was a really long sentence!

The mayor of Greensboro’s daughter lives in Carey, NC and her husband was just diagnosed with Celiac’s disease. She found out about my bakery and is in town for the weekend so had hoped to visit the up and running store. Well, an almost up and running store was good enough for her. I did have some goodies in my freezer at home that I brought to share with everyone. We had a very nice visit and they seemed to enjoy the muffins and cookies I had brought.

Today we did more running and searching for equipment (small items) and had success. I am very tired and was not much help once we got back to the bakery. My son-in-law picked me up and brought me home so I could rest while Don is still (as I am typing this) at the bakery scrubbing and waxing the floor. He used to do commercial cleaning (floors) as a profession for several years and was originally trained by a former Navy man – so he knows what he is doing and does it better than just about anyone!

We are working on putting together our team – it looks like all the pieces are beginning to finally come together.

We did receive our first shipment of paper products! That was kind of fun putting all that away – I like to organize, when there is a place to organize it all! We are still on the hunt for some sort of office walls that will not be overly expensive. Looking for cubicle walls or cabinets that their backs can be “walls” for the office.

My pics today are of Chocolate, Caramel and Vanilla – Caramel and Vanilla are already at the bakery and very excited about it. Chocolate is still at the house patiently waiting until he can go join his friends! (These are compliments of my darling daughter!!!) We have this addiction to bears (and ice cream!).

As you can see from the pictures, the chairs are all done and they look GREAT! We got a call from my mother’s moving company and they are coming down here next week with a truck and will be bringing my ‘new’ couch with them! I don’t have a clue how much this is costing my mom – didn’t ask and she didn’t offer – she thinks what we are doing is so great, she wants to help out as much as she can! Thanks Mom!

I happened to be perusing my cookbook’s site on Amazon and noticed that there are two new 5 star reviews! Thought I would post them here for you to read.

This first one is from a gal in Houston, TX:

After much research and self-diagnosis related to sinus and tummy troubles, I began digging around in the gluten free world. Could it be that I was gluten sensitive? I think so. I attempted to forego the white/wheat flour treats and baked goods that I love to make (and eat) and was not a happy camper. The GF goods in the store are just more processed junk. Yuck. Then I found this book. She has a recipe for all my favorite sweet treats and breadstuffs and believe me, they all taste delicious so far. Very moist and flavorful. Except! Don’t taste the batter if you normally would (heehee), it does taste sort of funny (like ground up beans)but that is no indication of the baked results. The gingerbread is to die for and stayed moist for several days wrapped in plastic on my counter! She uses Bob’s Gluten-Free flour and Xantham gum, which is not a chemical, contrary to what I previously thought. Both of these were easily found at Kroger. You can tell she is a good cook. She didn’t just “write a cookbook”. She has used her noggin to come up with these great alternative recipes and she uses them in her own house a lot. I love those kind of cookbooks! The items in this book will be in regular rotation at our house from now on. Thanks, Lindy.

This next one is from a friend of ours whom we have had over for dinner on a number of occasions – I didn’t know he had posted a review until a couple days ago! Thank you Julius!!

I was introduced to Lindy Clark and her husband Don about several months ago or more like 6 months ago and my wife and I have falling in love with this family especially her cooking. My wife and I have become professional taste testers at the Clark’s home. The first time I tried her goodies, I knew then there was something special about her and her baking. Trust me! I have tried quite a bit of her goodies and I am amazed that she keeps hitting homeruns every time I try them. I recommend her cookbook if you need to be gluten free or not. It’s just a great cookbook. Thanks Lindy for creating such a wonderful gift for baking and cooking!

Last night and this morning I got the curtains made for the windows. I also have been taking some time on Craig’s List to find furniture for the bakery (everything is for the bakery!). After I had the brilliant idea to get my mom’s couch, I also thought about the end table she has (which she IS taking with her), called a ‘step table’. So I hunted for end tables, thinking nobody in this day and age will remember what a step table is, and low and behold – a ‘two-tiered’ table came up and there was a picture showing it. Guess what it was? Yup, a step table! I went to see it today and brought it home with me. It probably could use a new finish, but for now, it will be fine.

I also contacted Homeland Creamery – a 6 generation local dairy farm – that supplies several retail stores in the Triad with their products – one of which being ice cream! I will be going to their office tomorrow to meet them and pick up their wholesale list. Just think, ice cream whenever I want it! Oh, this could be very dangerous for my hips!!!!! Not only will the bakery have baked goods and ice cream – but tempting desserts that will combine the two! I have all kinds of great cobbler and crisp recipes that just HAVE to be served warm with ice cream! Then there is always the warm apple pie ala mode! Man, I’m getting hungry! I just had another thought – there are always “flops” in my experimenting – items that still taste great, just don’t look good enough to sell. I could crumble them up to use as toppings on the ice cream – gluten-free cookies and cream! This whole bakery idea may just be fun after all!

The first Christmas tree ornaments for my bakery tree!

My daughter, friend, agent, design artist, among other things, has been away at a conference the past 5 days. She comes home with presents for me! My first Christmas tree ornaments for the tree that will be in the bakery. It will have a “baking” theme to it (imagine that?). We have been looking at the ornaments at Hobby Lobby and they have a whole bunch this year with the baking theme. Decorating for Christmas will be FUN! (I always like decorating – for any season, but especially Christmas.)
